Come drink the sun with us and wish the rain away, with these SUPERB cans of pure deliciousness from @_gosnells.

We have both Hazy Nectar and Raspberry & Hibiscus mead cans in the fridge, and they are both excellent examples of modern mead. Dry, sparkling & only 4%.

Thank you to everyone who came and joined us over the Bank Holiday weekend. Was great to see so many new and familiar faces in our bar.

We are now taking a long “weekend” for ourselves, so we are closed Wednesday this week as well as our usual Monday/Tuesday.

Blending @mezcalverdeamaras with @muyu_liqueurs Vetiver Gris, along with fresh lime & Sussex Honey, this homage to the inventor of the modern hive quenches all thirsts and hits every spot.

🪵Leatherwood Old Fashioned🪵

It’s no secret we use honey in our cocktails, but do you know we build our cocktails around the specific characteristics of varietal honey??

Take Leatherwood Honey for example. Leatherwood is a large shrub native to the forests of Western Tasmania, Australia. The white blossoms cover the tree from December to January, and the nectar, when turned into honey, produces a very distinctive flavour.

Smokey, woody & earthy, this honey lends itself perfectly to rum, bourbon & the guajillo chili sauce on our prawns 😋

We make our Leatherwood Old Fashioned with a blend of B-Corp certified Bourbon, Rye, Aromatic & Orange Bitters, and Leatherwood Honey.

The Rye Whisky adds a little spice that means the drink is not sweet, but still carries a distinctive woody honey aroma.

We then garnish the drink with homemade honeycomb (obviously!)

Today looks like Old Fashioned weather, so why not head on down and get your cocktail fix?

Nothing is more tranquil than listening to the dawn chorus as you put on the suit and prepare for a morning of beekeeping.

Loads of happy bees bringing in nectar & pollen, filling up the hive with sweet, natural sunshine.

It won’t be long now before we start preparing for the honey harvest, bringing the bee’s bounty into Brighton for you all to enjoy 😋

Meet the new Marg in Town

Our Langstroth Margarita pays homage to the creator of the modern hive, Lorenzo Lorraine Langstroth. By streamlining the way frames are built and laid out in a hive, he enabled modern beekeeping to flourish to the fantastic pastime it is today.

The drink itself is a winning mix of Mezcal, Cedar & Vetiver Liqueur, Lime & Sussex Honey. It’s also ABSOLUTELY DELICIOUS and we recommend you have one today, tomorrow and whenever you are in the area.

Mead is one of (if not THE) oldest alcoholic beverages in the world. In essence, a simple mix of honey, water & yeast, but can be made in a myriad of styles & flavours.

We are also the only place in Brighton to feature a mead list… so if you have a need for mead, come on down to @apiary_uk, just opposite Norfolk Square.

Even though we are only 2 months old, there are some dishes you get the feeling are going to be around for a while. One of them, is our Honey Toast.

Layers of Brioche wrapped in a Sussex Honey Butter, baked to crisp perfection, and then finished with Toasted Bee Pollen Ice Cream, a pinch of Good Salt, and more Honey.

Perfectly executed. Perfectly delicious. Just… 👏

The only real question is: one to share, or one each?
