🍯Honey Extraction🍯

Last month, we had the pleasure of working with @lozano_media to film the most exciting day of the year, the honey harvest.

It was a long day, starting at the crack of dawn, and finishing up past nightfall, but the reward is ALWAYS worth the effort!

Full credit to Rob, who put aside his aversion to flying insects to film this amazing insight into beekeeping. The finished article is also 🔥👏

Our honey is never heat treated, and only filtered once to remove any wax debris. The flavour this year is truly amazing: sweet, floral & slightly citrusy. A perfect accompaniment to freshly buttered toast, or used in a nice cup of tea.

We now have jars available to buy in house, so if you are looking for a little sweet treat for your weekend breakfast, we've got you covered!

Blending @mezcalverdeamaras with @muyu_liqueurs Vetiver Gris, along with fresh lime & Sussex Honey, this homage to the inventor of the modern hive quenches all thirsts and hits every spot.

🪵Leatherwood Old Fashioned🪵

It’s no secret we use honey in our cocktails, but do you know we build our cocktails around the specific characteristics of varietal honey??

Take Leatherwood Honey for example. Leatherwood is a large shrub native to the forests of Western Tasmania, Australia. The white blossoms cover the tree from December to January, and the nectar, when turned into honey, produces a very distinctive flavour.

Smokey, woody & earthy, this honey lends itself perfectly to rum, bourbon & the guajillo chili sauce on our prawns 😋

We make our Leatherwood Old Fashioned with a blend of B-Corp certified Bourbon, Rye, Aromatic & Orange Bitters, and Leatherwood Honey.

The Rye Whisky adds a little spice that means the drink is not sweet, but still carries a distinctive woody honey aroma.

We then garnish the drink with homemade honeycomb (obviously!)

Today looks like Old Fashioned weather, so why not head on down and get your cocktail fix?
